The pig is broken down to create a wide variety of joints;
Shoulder joints and steaks
Legs of pork
Pork belly steaks or joints
Diced pork ,which can be flavoured with Chinese flavouring
Pork ribs
Loin chops
Offal including liver, heart, kidney.

Beef
Beef is broken down into many different parts. These can be divided between roasting joints and slow roast or stewing meat.
Diced stewing meat
Mince
Braising steak
Pot roast joints
Leg joints
And best steaks sirloin, rump and fillet.

Chicken is available but must be ordered
Games birds are also available in season

Lamb
Lamb is mostly seasonal
The joints consist of
Legs for roasting
Shoulders for slow roasting
Chops and leg steaks.
